I have not been able to find a whole lot of info on tea made with Sasa veitchii leaves, but I have found things like the following:
Kuma Saza tea

Maybe I'll harvest a few of next year's new S. veitchii leaves and try drying and brewing them. Never thought of bamboo for tea, but it could be a nice no-caffeine beverage.
Love white tea, and look for it at the local discount store that gets overstock gourmet foods and sells them cheap. Got 100-teabag boxes of white tea for $4.99 each. Jasmine green tea, too.

I am slowly switching over from my 30 cups of coffee/day habit to 4 cups or so of tea. I'm also trying to kick my caffeine addiction, which is why I'm sticking to herbal teas.
