I wasn't entirely sure if my little moso seedling would survive it's first winter outside but it managed to pull through and is shooting before any of my other running bamboo!

Nice. How cold did it get over in your part of the world?

I believe the coldest we got was anywhere from - 15°C to maybe - 20°C when that winter vortex came through.

Roots and rhizomes can handle some cold, but on the long run, Moso will suffer if temperatures drop to - 20°C.
We've had warm winter here and my Moso seedling that suffered last few winters furiously exploded.
In marginal climates, you can only hope for a decent snow cover which protects the bamboo. It gets way too large and it's not easy to tarp the beast to the ground, snow is the only way. I mulched area around it a few years ago which attracted rodents, so I stopped that as well.

With age, it becomes more hardy. - 15°C could defoliate it this year, but in a year or two, it should handle it without much hassle.
